Oversee daily operations of our signature Chinese dining establishment, Fan Guan, ensuring exceptional guest experiences that reflect Rosewood’s luxury standards and authentic cultural relevance. This role requires a dynamic leader who can manage all aspects of restaurant operations while maintaining the highest standards of service, quality, and profitability.
Responsibilities
1) Operations & Service
Oversee daily restaurant operations including opening/closing procedures and compliance with health, safety, and hygiene regulations
Monitor service flow during peak and off-peak periods, making real-time adjustments to optimize guest satisfaction
Coordinate with culinary team to ensure menu execution meets quality and presentation standards
Maintain restaurant ambiance, cleanliness, and overall guest environment
2) Guest Experience
Deliver exceptional, personalized service that anticipates and exceeds guest expectations
Build strong relationships with regular guests, understanding their preferences and special requirements
Handle guest feedback, complaints, and special requests with professionalism and efficiency
Ensure culturally relevant dining experiences that honor authentic Chinese culinary traditions
3) Team Leadership
Lead, motivate, and develop a high-performing team of associates
Conduct regular training sessions on service standards, menu knowledge, and cultural authenticity
Manage staff scheduling, attendance, and performance evaluations
Foster a positive work environment that encourages teamwork and professional growth
4) Financial Management
Achieve revenue targets and profitability objectives through effective cost control and revenue optimization
Monitor daily sales, covers, and average spend, implementing strategies to maximize performance
Control food and beverage costs, minimizing waste and ensuring efficient inventory management
Prepare and manage operational budgets, forecasts, and financial reports
Implement upselling techniques and promotional activities to drive revenue
5) Collaboration
Work closely with Director of F&B to align restaurant operations with overall F&B strategy
Collaborate with culinary team on menu development, seasonal offerings, and special promotions
Liaise with other departments including Events & Partnership, Academy Experience, and Sports Development & Education
Qualifications
Minimum 5 years management experience in upscale Chinese restaurants or luxury hotel dining
Strong understanding of authentic Chinese cuisine, service traditions, and cultural nuances
Proven track record in fine dining operations with exceptional leadership abilities
Solid business acumen with understanding of financial metrics and cost control
Fluency in Cantonese and English (Mandarin is an advantage)
