Production Manager – Central Kitchen Production

Overall Purpose of the Role

The primary focus of this role is to be responsible for the day-to-day operation of the Hong Kong Central Production Units (CPU) ensuring production is planned and executed within budget to meet customers (both internal and external) requirements, maximising efficiencies through advanced planning and forecasting and ensuring all revenue is captured.

The Production Manager is also responsible for the logistics requirements of warehousing and dispatching products in accordance with the site Food Control Plan, ensuring that all tasks associated with food production, transport and logistics are performed with due regard for all Health and Safety and Food Safety regulations.

Responsibilities

  • Support the strategy of growth and retention of new and existing business in the sectors using the CPU for product delivery through supporting the operational implementation of short to medium term plans
  • Work with Culinary director to develop strategies to improve process, reduce costs and maintain quality standards
  • Monitor financial activities against budget & allocate budget resources – identify opportunities to increase revenue & improve budget performance for CPU
  • Follow best practice culinary standards and resources outlined in the Kitchen Production Manual
  • Stay up-to-date with culinary market trends and competitor movements
  • Ensure Hygiene and Food Safety legislation and regulations in relation to food safety program requirements are adhered to buy all staff

Requirements

  • Minimum 5 years working experience in a similar position
  • Professional communication skills, oral and written
  • College or culinary training or extensive cooking and production experience
  • Actively supervises, motivates and inspire employees
  • Ability to work in a high-energy and demanding environment. Able to work under pressure.
  • Knowledge of food safety systems like HACCP is preferable
