Full job description

Cooley Oysters is looking for a responsible and hands-on Restaurant Assistant Manager to support the overall daily operation of our restaurant at Hysan Place, Causeway Bay.

This role is suitable for candidates with solid restaurant floor management experience who are able to supervise the floor team, maintain service standards, handle daily operational issues and support management in restaurant control.

Key Responsibilities

1. Daily Restaurant Operation

Oversee daily lunch and dinner floor operation.

Ensure smooth service flow between the floor team, kitchen team and management.

Monitor guest seating, table turnover, service speed and overall dining experience.

Handle daily operational issues and report important matters to management clearly.

Support both dining area and counter / bar seating operation.

2. Team Management

Supervise full-time and part-time floor staff.

Arrange and allocate staff duties during daily service.

Train new staff on table numbers, service standards, POS operation, menu knowledge and daily workflow.

Monitor staff attendance, grooming, service attitude and working performance.

Report staff issues factually and promptly to management.

3. POS, Payment and Closing Control

Ensure POS items, sold-out items and stock availability are updated correctly.

Assist with daily payment checking, card payment handling and closing procedures.

Follow company cash handling, tips handling and settlement procedures strictly.

Ensure daily closing checklist is completed before leaving the shop.

Report any payment discrepancy, POS issue or operational irregularity immediately.

4. Guest Service and Complaint Handling

Handle guest enquiries, feedback and complaints professionally.

Maintain service quality during peak hours.

Support recommendations on oysters, seafood, handmade pasta, wine and set menus.

Maintain a professional and positive restaurant atmosphere.

5. Stock, Supplier and Internal Communication

Follow up daily stock availability with kitchen and management.

Assist with supplier delivery checking when required.

Communicate clearly with kitchen regarding sold-out items, special items and daily operation changes.

Ensure management instructions are properly passed to floor staff.

6. Restaurant Standards and Hygiene

Maintain overall floor, counter and dining area standards.

Ensure food passing areas, service stations, table settings and guest areas are clean and presentable.

Monitor closing cleanliness and hygiene procedures.

Ensure the restaurant maintains proper standards suitable for seafood and oyster service.

Requirements

1. Minimum 3 years of restaurant floor experience.

2. Previous experience as Assistant Manager, Supervisor, Captain or Senior Server is preferred.

3. Experience in Western restaurant, seafood restaurant, wine bar, hotel F&B or casual fine dining is an advantage.

4. Strong sense of responsibility and operational awareness.

5. Able to supervise and train junior staff and part-time staff.

6. Good POS and payment handling experience.

7. Able to work under pressure in a fast-paced restaurant environment.

8. Good spoken Cantonese is required.

9. Basic English and Mandarin communication is preferred.

10. Must be able to work weekends, public holidays and dinner shifts.

主要職責

1. 日常餐廳營運

負責監督午市及晚市樓面運作。

確保樓面、廚房及管理層之間溝通順暢。

監察入座安排、翻枱流程、服務速度及整體客人體驗。

處理日常營運問題,並清楚向管理層匯報重要事項。

支援餐廳用餐區、吧檯及 counter 座位的日常運作。

2. 團隊管理

監督全職及兼職樓面員工。

安排及分配每日服務崗位及工作職責。

培訓新員工熟習枱號、服務標準、POS 操作、餐牌知識及日常工作流程。

監察員工出勤、儀容、服務態度及工作表現。

如有員工表現或紀律問題,須以事實為基礎及時向管理層匯報。

3. POS、收款及收舖管理

確保 POS 系統內的產品、售罄項目及庫存狀態正確更新。

協助每日收款核對、信用卡付款處理及收舖程序。

嚴格按照公司現金、貼士及結算程序執行。

確保每日收舖 checklist 完成後才離開店舖。

如發現任何收款差異、POS 問題或營運異常,須即時向管理層匯報。

4. 客戶服務及投訴處理

專業處理客人查詢、意見及投訴。

於繁忙時段維持服務質素及現場秩序。

協助向客人介紹生蠔、海鮮、手工意粉、葡萄酒及套餐內容。

維持專業、正面及穩定的餐廳服務氣氛。

5. 庫存、供應商及內部溝通

與廚房及管理層跟進每日食材及產品供應狀況。

按需要協助檢查供應商送貨。

與廚房清楚溝通售罄項目、特別供應項目及當日營運變動。

確保管理層指示能夠正確傳達予樓面員工。

6. 餐廳標準及衛生

維持樓面、吧檯、counter 及用餐區整體整潔及標準。

確保出餐位置、服務站、餐具、玻璃杯及枱面保持乾淨整齊。

監督收舖清潔及衛生程序。

確保餐廳維持符合海鮮及生蠔餐廳所需的衛生及服務標準。

入職要求

1. 最少 3 年餐廳管理樓面經驗。

2. 具備助理經理、Supervisor、Captain 或 Senior Server 經驗者優先。

3. 曾任職西餐廳、海鮮餐廳、酒吧、酒店餐飲或 casual fine dining 經驗者優先。

4. 有責任感,具備良好營運意識。

5. 能夠監督及培訓初級員工及兼職員工。

6. 具備 POS 及收款處理經驗。

7. 能夠於繁忙餐廳環境下承受工作壓力。

8. 必須操流利廣東話。

9. 懂基本英語及普通話溝通者優先。

10. 必須能夠於週末、公眾假期及晚市時段上班。
